Winter Squash and Wild Mushroom Curry, from NYTimes

I am very lucky to live near an international grocery store so could easily get curry leaves, several kinds of wild mushrooms and whole turmeric, that I grated myself. But all of these are becoming more available everywhere and even if you don’t add the curry leaves and just use button mushrooms, it will still have that amazing Indian curry flavor.

Having everything chopped and then set up in the order of when it will be added makes a big difference when you are working quickly. Don’t omit the lime and cilantro as the final step. So good!
